Tortellini with Tomato Basil Sauce
Grilled Cheese Sandwiches and Salad
Honey Mustard Chicken, Rice Pilaf and Broccoli
Hamburgers, Fries and Salad
Spinach Fettuccine with Artichokes
Meat Loaf, Green Beans, Mashed Potatoes
Cinco de Mayo Casserole- This is so good. And my kids love it. Here is the recipe:
3 Cups cooked chicken
1 can cream of mushroom soup
1 can cream of chicken soup
1 can rotel tomatoes with green chiles ( I use salsa)
1/2 cup chicken broth
2 tsp salt
I bag tortilla chips
1 onion chopped and sauteed
3 cups shredded cheddar cheese
Combine Chicken broth, soups, rotel, and salt. In a 3 Qt. casserole dish place tortilla chips, chicken, soup mixture, onions and cheese (in that order). Bake for 45 minutes at 350 degrees.
