2) Hike to the top of Half Dome. This will take a lot more time to accomplish, I think. I'm not in that great of shape, but I am 5 lbs away from my weight goal. I've been walking, but I'd love to be in really great shape when Kevin gets home. Mostly so I can keep up with him, but so we could hike up there together.
3) Take a public speaking class, or speech, through the Junior College. I'm the worst at talking in public. It's not that I'm shy. I just have this huge fear of what people think of me, and I don't generally have a whole lot to say to anyone. People will ask me what I'm thinking about and I'll just say nothing because I'm really NOT thinking about anything. I just observe a lot. I'm one of those absorber types....Absorb everything and say nothing. Funny isn't it, since I find all kinds of things to say on here.
4) Find somewhere to make friends. I have none, so at least one would be great. (Well aside from you readers of my blog.) I'm thinking if I take a class or start working out a gym maybe I'll make a few. You know, the proverbial killing of two birds with one stone.

I told Anthony yesterday that I would bake him an apple pie. So I got up at 7 and made one.

Here's the recipe:
Double Crust
2 stcks of cold butter, cubbed
2 1/2 cups flour
1 tsp salt
1 Tbl sugar
1/4 cup of ice cold water
Mix the dry ingredients in a bowl. Add your butter and toss gently to coat butter cubes with flour. With your fingers, mash the butter cubes flat. Mix them together with the flour as you go. It will be mixed enough when it looks moist and you have large crumbs. Add your water a little at a time, mixing as you go. If you add all the water and it is too wet, add more flour aTbl spoon at a time till you have a dough that just comes together. Work the dough into a ball and flatten. Let it rest for 15 minutes, or until you have your filling ready. Split the dough in two pieces and roll out for your pie pan. Bake it HOT at 425 degrees until it is golden brown on top.
